Italian whole grain quinoa is an excellent base for vegetable salads and for boiled white meats. In particular, it is very well suited for mixing with other legumes such as chickpeas, beans, peas, and nuts like cashews or pine nuts. It is also great with Piennolo tomatoes from Vesuvius DOP or the classic Neapolitan Pacchetella to give a more Mediterranean flavor.
Tasting
Quinoa has the particularity of resembling cereals both in taste and in its ability to produce flour with a very high starch content. It is often associated with the cereal category even though it is not entirely, as it does not belong to the grass family. For this reason, it is also called "pseudocereal".
