The sugo alla Norma is one of the most famous recipes from the island tradition, taken from the Frantoi Cutrera to create an easy, quick, and tasty preserve to always have on hand. This specialty typical of Catania has a very interesting history: it was indeed invented to pay tribute to the famous opera by Vincenzo Bellini, namely Norma.
