The Malga Ciapela aged for 2 years is a cheese made from raw mountain milk and refined in a natural tufa cellar located at the foot of the Queen of the Dolomites, the Marmolada.
The paste is straw-colored, soft and compact, with a regular, medium-sized hole structure. The rind is regular and light yellow in color. The flavor is sweet, fragrant with a pronounced buttery note, and a pleasantly persistent slight bitter aftertaste. The aroma is strong, fresh, with hints of cream.
The Malga Ciapela aged for 2 years (which we present on this page in a 1kg portion) is an excellent cheese for a cutting board, especially if it features mountain products. It is also a great cheese to enjoy pure at the end of a meal, paired with a good intense red, such as a Amarone della Valpolicella DOCG. It pairs very well with chestnut honey.
