At I Sapori del Portico, the cheese is wrapped in chestnut leaves collected from the area of Monte Baldo, the mountain that overlooks the Lake of Garda, and stored in hermetically sealed glass containers.
The texture is rich and creamy; on the palate, it is intense, aromatic, with very persistent acidic and salty undertones, and it tends to become spicy as the aging progresses.
