The Blu aged in chestnut leaves is a true surprise that will leave you pleasantly amazed. It is a blue cheese made from cow's milk that undergoes a particular refinement. At I Sapori del Portico, the wheel is indeed wrapped with chestnut leaves collected in the area of Monte Baldo, the mountain overlooking the Lake Garda, and stored in hermetically sealed glass containers.
The paste is rich and buttery; on the palate, it is intense, aromatic, with lingering sour and salty notes and tends to be spicy as it ages.

The Blu refined in chestnut leaves (which we present on this page in a 500g portion) is a perfect cheese for a delightful cheese board, due to its rarity and intriguing aromatic intensity as well as its remarkable blue veining.
It is engaging when paired with a touch of acacia honey or with Mantuan apple mustard.
Great as an appetizer on toasted bread with extra virgin olive oil or on a slice of black cereal bread.
We also recommend it for stuffing herb omelets with spring wild herbs such as tarragon, dandelion, or wild asparagus.
