The Blu di capra del Baldo is a blue cheese made from whole goat's milk from the Baldo area, the mountain overlooking Lake Garda. A product that satisfies fans of blue cheeses and appeals to those who do not appreciate intense goat notes.
The light hazelnut and rosy colored rind is slightly rough and features holes made to promote the blueing process. The paste is compact, ivory-colored, with a homogeneous blueing. Generally sweet and delicate with milky sensations. Goat notes are lightly pronounced, also thanks to the blueing, which remains gentle.
The Blu di capra del Baldo (which we present on this page in a 1kg portion) is excellent when paired with thinly sliced raw fennel.
Delicious also with a fresh pear purée or even with a light honey. It’s wonderful when tasted on its own, but our advice is not to serve it cold from the fridge to appreciate all its sensory characteristics. At room temperature, it’s a whole different story!
