The Blu di capra del Baldo is a blue cheese made from whole goat's milk coming from the Baldo area, the mountain overlooking Lake Garda. A product that satisfies blue cheese lovers and appeals to those who do not appreciate intense goat flavors.
The light hazelnut and pink-colored rind is slightly rough and features holes designed to promote blueing. The paste is compact, ivory-colored, with a homogeneous blueing. It is generally sweet and delicate with milky sensations. Goat notes are understated, also thanks to the blueing that remains gentle.
The Blu di capra del Baldo (which we present here in a 500g portion) is excellent when paired with thinly sliced raw fennel.
Delicious also with a fresh pear purée or even with a light honey. It tastes great when enjoyed on its own, but our advice is to avoid serving it cold in order to appreciate all of its sensory characteristics.
