The Bagoss d'alpeggio aged 24 months Slow Food Presidio is a mountain cheese made from raw milk obtained from Brown breed cows produced only in 28 small farms within the area of Bagolino, in the Brescia mountains. It is a true gem, yellow as gold: this is because saffron is present in the paste.
A cheese full of emotions: the milk from the Brown cows is rich in fats and proteins, increasing the yield in cheesemaking (up to one kilogram more for every 100 liters of milk). These cows graze in one of the 22 alpine pastures recognized in the area of Bagolino and are fed with local hay.
Bagòss is a cheese that strongly identifies with the area in which it is produced, also because to obtain the production mark, it must be made exclusively within the area of Bagolino. Its name embodies this deep spirit of attachment to the region, as it is derived from the name of the inhabitants of Bagolino, Bagossi.

The Bagoss cheese from Bagolino aged 24 months is the ultimate meditation cheese, known in its region of origin as "Grana Bresciano" or "Grana dei poveri". Like Grana, it was widely used in cooking: in omelettes, particularly those with wild and mountain herbs, in the filling of ravioli, or to enhance soups, broths, and risottos. It is an excellent cheese to enjoy with coarse polenta served hot straight from the pot. A pairing with Bagoss could be a wine with classic bubbles, such as a nice Franciacorta, or considering its aging, structured red wines like a Amarone or a Barolo.
Tasting
The finished product is a true masterpiece: the rind is capped and presents a brown-ochre color; the paste has a granitic texture with slight holes and a deep straw-yellow color, with a greenish hue; it tends to break into flakes.
Rich, with intense spicy notes of saffron and hints of pasture, a slight sensation of almonds, and a slightly spicy finish.

Il prodotto finito è un vero capolavoro: la crosta è cappata e presenta un colore bruno-ocra; la pasta ha una consistenza granitica con una leggera occhiatura e ha un colore giallo paglierino carico, con una sfumatura verde; tende a rompersi in scaglie.
Ricco, con intense note speziate di zafferano e sentori di pascolo, una leggera sensazione di mandorle e un finale lievemente piccante.
Noi lo consegniamo porzionato sottovuoto, imballato in confezioni termiche così da farvelo gustare appieno. Non vi è ancora venuta l'acquolina in bocca?
