The Medieval Cheese Castle is a raw milk cheese from the Treviso dairy Perenzin: it has a compact and white paste, an orange wrinkled rind, and an intense aroma reminiscent of milk.
The production of this cheese includes a particular, careful, and continuously monitored ripening at room temperature that induces fermentative processes capable of altering the texture of the paste and enhancing certain aromas and flavors.
The Medieval Cheese Castle is the result of research by master cheesemaker Carlo Piccoli, whose intention was to interpret a cheese made from milk of the Treviso and Belluno foothills in the manner of the Middle Ages.
The Medieval Cheese Castle (in a 200-gram portion) is exceptional when accompanied by black bread and chestnut honey, but it is also an excellent ingredient for important dishes, from risottos to onion soups to rolls of red meats. A good wine to pair with it is certainly a passito capable of sustaining its intensity.
A cheese that offers a great richness of sensations. Corrugated straw-colored rind with patches of white molds, which become increasingly orange with aging. Immediate and intense aroma of lactose with hints of underbrush. White, compact, but crumbly paste. On the palate, it takes on intense notes of fermented milk and hints of mushroom. Occasionally, slight blueing may appear.
