Its great peculiarity is the pleasant contrast between the granularity and the softness of the pale straw-colored paste, characteristic of cheeses made with Sardinian sheep's milk. A balanced mix of experiences enclosed in a compact and smooth rind.
This cheese originates in Sardinia, but is then brought to Abruzzo, in the stone caves of Rocca Calascio, where it is aged by the Taberna Imperiale and matured for 36 months.
