The Mimolette Vieille is a typical French cheese, one of the rare exceptions on our portal that looks outside of Italy for a niche selection abroad. It is a cheese produced in the Lille region, in the north-east of France. A historic cheese: it has been produced since the 17th century!
Cheese made from whole cow's milk. Its paste is compact, devoid of holes, and has an orange color. It presents a sweet taste on the palate with delicate and not too intense aromas, despite being a semi-aged cheese.
The typical orange color of this cheese comes from a natural dye: annatto. Annatto is a yellow-red dye derived from carotene and extracted from the Bixa Orellana, a wild plant from the Amazon that is mainly cultivated in Central America and India.
The Mimolette Vieille (which we present on this page in a 1-kilogram portion) is a delicious cheese, enjoyable at any time of the day: as a breakfast, as a snack, or at the end of a meal.
It can also be grated to prepare tasty recipes. It is also a cheese for a platter, making it perfect as an appetizer. It pairs well with a full-bodied red wine or with a Chuche-mourette (an aperitif made with juniper brandy) or with a Belgian double malt beer.
