The Mimolette Vieille is a typical French cheese, one of the rare exceptions on our portal that looks beyond Italy. It is a cheese produced in the Lille region, in the northeast of France. A historic cheese: it has been produced since the 17th century!
Cheese made with whole cow's milk. Its paste is compact, free of eyes and orange in color. It presents a sweet taste with delicate and not too intense aromas, although it is a semi-mature cheese.
The typical orange color of this cheese comes from a natural coloring agent: annatto. Annatto is a yellow-reddish dye derived from carotene and extracted from the Bixa Orellana, a wild plant from the Amazon cultivated mainly in Central America and India.
The Mimolette Vieille (which we present on this page in a 200-gram portion) is a delicious cheese, enjoyable at any time of the day: as breakfast, as a snack, or at the end of a meal. It can also be grated to prepare tasty recipes.
It is also a cheese for a cheese board, making it perfect as an appetizer. It should be paired with a full-bodied red wine or with a Chuche-mourette (aperitif made from juniper brandy) or with a Belgian double malt beer.
This cheese has been selected for you directly by a great cheese maker from Veneto, Giuseppe Bernardinelli of I Sapori del Portico.
