Sheep cheese is wrapped in fig leaves which ensure better preservation and, above all, release their whey that hardens the rind and gives it a pleasant floral sensation.
Subsequently, the pecorino wrapped in this way is left to mature inside used French oak barriques that previously contained wine suitable for Amarone della Valpolicella DOCG.
The uniqueness of this cheese is not only due to the fact that it is aged wrapped in fig leaves, but, above all, that the aging period takes place entirely inside discarded barriques from Valpolicella. At the end of the maturation, the sensations of vegetal fig gently blend with the winey and vanilla notes of French oak. Very intriguing.
