The sheep cheese is wrapped in fig leaves that ensure better preservation and above all release their whey, which hardens the rind and gives it a pleasant floral sensation.
Subsequently, the pecorino thus wrapped is left to mature inside used French oak barrels that previously contained wine suitable for Amarone della Valpolicella DOCG.
The uniqueness of this cheese is not only due to the fact that it is aged wrapped in fig leaves but, above all, that the aging period takes place entirely inside discarded barriques from Valpolicella. At the end of the maturation, the sensations of fig vegetation delicately blend with the winey and vanilla notes of the French oak wood. Very intriguing.
