The Pecorino morbido made from raw milk is a completely natural product, with a particularly soft texture and a strong flavor. Made from unpasteurized Aostan sheep's milk, it is rich in natural cultures.
This cheese is decidedly fresh, with a short aging period, averaging 20 days, and is produced as families of shepherds and cheesemakers did more than a hundred years ago, using natural rennet and without pasteurizing the milk. Its texture is white, soft, sweet, and aromatic, and it has an unmistakable taste.
The Soft Pecorino made from raw milk from Aosta (which we present here in a 200g portion) is an excellent cheese for platters, paired with mustards or jams made from oranges and figs, or with the more acidic ones like quince or lemon jams, which contrast well with the sweet flavor of Fresh Pecorino.
It can be enjoyed naturally on bread or paired with vegetables, but also with broad beans and peas. Suggested wines: full-bodied and aged.
