The Toma Brusca Castelrosso is a semi-hard cheese with a long traditional maturation from Piemonte, made from pasteurized whole cow's milk that has been rested to acidify.
The flavor is fine, refined, and complex; moderately spicy, with a possible presence of natural blue mold in the more aged wheels.
