The Toma di Gressoney is a gem of the Aosta Valley dairy scene. Semi-fat cheese with a soft texture: this toma is processed directly in the pastures of the Valley of Lys using traditional methods.
This cheese is made from goat's milk and is aged for at least 45 days. Thanks to the clear air and the purity offered by the environment in which the goats graze, Toma di Gressoney is rich in interesting organoleptic properties: it has, in fact, less than 23% fat. It provides a rather high intensity of aroma and floral sensations. Its paste is elastic, light straw-colored, and has a sparse but evenly distributed eye.

An important table cheese to be enjoyed throughout the meal, great when paired with homemade bread.
It stands out on cheese boards alongside other mountain cheeses and aged varieties. Even better when served at the end of the meal or accompanied by the many typical Valdostan cured meats.
As a pairing, it definitely prefers full-bodied red wines.
