The Toma di Gressoney is a gem of the Valdostan cheese scene. Semi-fat and soft cheese: this toma is made directly in the pastures of the Valley of Lys using traditional methods.
This cheese is made from goat's milk and is aged for at least 45 days. Thanks to the clear air and the purity of the environment in which the goats graze, Toma di Gressoney is rich in interesting organoleptic properties: it has less than 23% fat. It delivers a rather high intensity of aromaticity and floral sensations. Its paste is elastic, light straw-colored, and has sparse but regularly distributed eyes.

An important table cheese to enjoy throughout the meal, great when paired with homemade bread.
It looks great on platters alongside other mountain and aged cheeses. Even better if served at the end of the meal or paired with the many typical Valdostan cured meats. For pairing, it definitely prefers full-bodied red wines.
