The formaggella is produced with cow's and sheep's milk coming from Alta Langa in the province of Cuneo. Afterwards, the aging process begins by I Sapori del Portico: for several days, it is left in a glass jar with annurca apples and rum. The annurca apples are a typical variety from the Campanian hills, particularly from the Avellinese and Beneventano regions. They are small in size and when harvested, they are laid on straw or hay along the rows. Under the sun, they dehydrate and concentrate all their unique flavor.
Square cheese from the Langhe, produced with cow's and sheep's milk. Its uniqueness comes from the fact that the affineur Giuseppe Bernardinelli hermetically sealed the cheese in a small glass jar with some Campanian Annurca apple and rum. A decidedly intriguing mix that enhances the aroma of a slightly dehydrated antique apple and a not particularly aged agricultural rum.
