IGP cured meat with protected geographical indication typical of Colonnata, a small village in the Apuan Alps under the municipality of Carrara. It is produced with seasoned lard from pigs in marble basins of Carrara.
With a moist appearance and a slightly pinkish white color, it has a homogeneous and soft texture. The flavor is delicate and fresh, almost sweet, with a fragrant aroma.
The marble of Carrara is also used to preserve food. From the marble, basins are made in which the slices of pig lard and the salt with herbs: pepper, cinnamon, cloves, coriander, sage, rosemary are alternately layered. The basins, rubbed with garlic, have specific temperatures and humidity, which gives the finished product unique characteristics.
The ideal use of Colonnata IGP lard, in a 500g portion, is raw, sliced thinly. In the past, it was considered a simple condiment or the "poor" food for workers in the quarries, given its high nutritional value. It can be enjoyed as a dish on its own or in unusual pairings, such as with shellfish.
Compact, uniform appearance. Pinkish white color. Soft, velvety texture, not oily. Typical odor, aromatic, fragrant, delicate. Moderately flavorful taste, elegant, finely spiced.
