IGP cold cuts with protected geographical indication typical of Colonnata, a village in the Apuan Alps under the municipality of Carrara. It is produced with aged pork lard in marble basins from Carrara.
With a humid appearance and a slightly pinkish white color, it has a homogeneous and soft consistency. The taste is delicate and fresh, almost sweet, with a fragrant aroma.
Carrara marble is also used for food preservation. Marble is used to create the basins where, in alternating layers, slices of pork lard and salt with spices: pepper, cinnamon, cloves, coriander, sage, rosemary are placed. The basins, rubbed with garlic, have specific temperatures and humidity, which gives the finished product unique characteristics.
The ideal use of Colonnata IGP lard, in a 1kg portion, is natural, sliced thinly. In the past, it was considered a simple condiment or the "poor" companion for the quarry workers, given its great nutritional contribution. It can be enjoyed as a dish on its own or even in unusual pairings, such as with shellfish.
Compact and uniform appearance. Rosy white color. Soft, velvety, non-greasy texture. Typical, aromatic, fragrant, delicate smell. Moderately flavorful taste, elegant, finely spiced.
