IGP cured meat with protected geographical indication typical of Colonnata, a small town in the Apuan Alps under the municipality of Carrara. It is produced with aged lard from pork in marble basins from Carrara.
With a moist appearance and a slightly pinkish white color, it has a homogeneous and soft consistency. The taste is delicate and fresh, almost sweet, with a fragrant aroma.
Carrara marble is also used for preserving food. From the marble, the basins are made where the slices of pork lard and salt with herbs: pepper, cinnamon, cloves, coriander, sage, rosemary, are layered alternately. The basins, rubbed with garlic, have specific temperatures and humidity, giving the finished product unique characteristics.

The ideal use of lardo di Colonnata IGP is raw, cut into thin slices. In the past, it was considered a simple dressing or the "poor" side dish for workers in the quarries, given its great nutritional value. It can be enjoyed as a dish on its own or in unusual combinations, for example with shellfish.
Compact, uniform appearance. Pinkish white color. Soft, velvety, non-oily consistency. Typical scent, aromatic, fragrant, delicate. Moderately flavorful taste, elegant, finely spiced.
