The Giardiniera is perhaps one of the most well-known and appreciated appetizers in Italy. It is a mixture of chopped vegetables, boiled in water and vinegar often used as a side dish, garnish, or ingredient in other more elaborate preparations.
The giardiniera has a long history behind it that draws its roots from the peasant tradition as it originated as a method to preserve part of the abundant vegetable production during the summer months, with the aim of consuming it during the winter.
Being a typical preparation from many regions of Italy, there are numerous variations that differ according to the vegetables used, the addition of flavors, or preparation methods. The vegetables mainly used to prepare giardiniera are carrots, celery, the flowering heads of cauliflowers, small onions, peppers, and gherkin cucumbers.
