Protected Geographical Indication salami typical of Colonnata, a village in the Apuan Alps under the municipality of Carrara. It is produced with seasoned lard from pigs in marble basins of Carrara.
With a moist appearance and a slightly pinkish white color, it features a homogeneous and soft consistency. Its taste is delicate and fresh, almost sweet, with a fragrant aroma.
The marble of Carrara is also used to preserve food. The basins are made from marble, where the slices of pork lard and the salt with herbs: pepper, cinnamon, cloves, coriander, sage, and rosemary are placed in alternating layers. The basins, rubbed with garlic, have particular temperatures and humidity, which gives the final product its unique characteristics.
The ideal use of Colonnata IGP lard, in a 250g portion, is natural, cut into thin slices. In the past, it was considered a simple condiment or the "poor" companion for workers in the quarries, given its great nutritional value. It can be enjoyed as a standalone dish or in unusual pairings, for example, with shellfish.
Compact, uniform appearance. Pinkish-white color. Soft, velvety, non-greasy texture. Typical smell, aromatic, fragrant, delicate. Moderately flavorful taste, elegant, finely spiced.
