Cured pork collar "Deavina" in Amarone della Valpolicella DOCG half

A tasty tribute by Corrado Benedetti to the wine traditions of his land: the Coppa Affinata all'Amarone della Valpolicella is the result of processing selected meats from local pigs, characterized by the perfect balance between lean parts and fat that gives it the characteristic marbling.

Cured pork collar "Deavina" in Amarone della Valpolicella DOCG half: How is it produced

After the aging of over 12 months, the coppa is refined through an immersion in Amarone for about twenty days, then it is removed and dried before continuing the aging for another month.
The Amarone thus gives fragrance and softness to the coppa, which absorbs the typical scents and colors of Amarone.

Corrado Benedetti, Veneto

The Benedetti family comes from the early slopes of the Lessinia plateau, near Giare. At a famous fork where the small road leads to one of the places, geologically and anthropologically... Go to the details of Corrado Benedetti.

The Deavina Coppa aged in Amarone, half wheel, is a cured meat that enhances every appetizer.

Wonderful on a slice of warm bread, despite the uniqueness of this cured meat, the ideal way to enjoy it remains fresh as an appetizer, slicing the pieces at the moment and placing them on a beech wood cutting board. Given its delicacy, it pairs excellently with delicate mustards made from berries or cherries.

An excellent gift idea, the Deavina Coppa aged in Amarone is divine as an appetizer for lunches and dinners with exceptional guests or simply to savor something spicier and more particular.

Tasting notes

The particular aging process of this cured meat allows the meats to absorb the intense fragrances of red wine, darkening and becoming even more tender when cut, releasing aromas and flavors for a triumph of gastronomic wisdom.

The slice presents a very intense ruby red color, interspersed with white veins typical of coppa.

On tasting, the presence of Amarone is evident; the slight fruity notes imparted by the wine can be immediately perceived. It is a sweet and delicate cured meat, with an aromatic hint of wine.
