In this chocolate we find all the expressive power of the Nacional fino de aroma Arriba Superior Summer Selected. A long and wide pleasantness on the palate that blends with a particular cane sugar, Mascobado, which has a hint of licorice.
Modica chocolate does not undergo conching, which is the process of remelting through which chocolate becomes glossy and soluble. Sabadì performs a tempering of the mass to avoid the separation of cocoa butter that would leave a white halo and would thus prevent the pleasantness of the intense black color of the cocoa.
