This Rolled bacon from the Pedrazzoli Salami Factory is without rind, synthetic casing and is with garlic, and is made from the pork meat coming from the same farms of the Pedrazzoli family.
To obtain this product, the central part of the pig's belly is used, trimmed and skinned. It is then salted by hand, and rolled. Everything is then tied and aged for at least 30 days.
Bacon has ancient historical origins dating back to the time of the Roman Empire when it was given to legionaries in slices every three days. In subsequent eras, it also became a form of payment, as in the Longobard period, when bricklayers at the beginning of the seasonal work were paid with cuts of bacon.
The Rolled pancetta without rind and with garlic (in a 1kg portion) from Salumificio Pedrazzoli is first and foremost an excellent cold cut to use on a charcuterie board. It is served both pure, preferably with hard bread, and paired with some slices of ripe pear, which helps cleanse the palate. Its use in the kitchen is versatile: for example, in cubes in special sauces for regional pasta. It pairs wonderfully with young red wines, even lively or sparkling ones, like Oltrepò Pavese Bonaria.
This pancetta has a bright red color interspersed with white and emanates a light fragrance with a sweet aroma. It has a light and delicate flavor.
