The Blu di Veja made from cow's milk aged in white wine is one of the flagship products from Corrado Benedetti.
It is a compact and firm blue cheese, made with only cow's milk produced by a small dairy in the Gorgonzola area.
A delicious semi-cooked cow's milk cheese, blue-veined and aged for 30 to 60 days, and refined with a dip in white wine for at least another month. At first glance, it may seem like Gorgonzola, but it is not.

The Blu di Veja made from cow's milk aged in white wine (in a 300-gram portion) is an excellent ingredient for risottos, such as the one with grapes, Veja blue cheese, and hazelnuts. It is also great to enjoy at the end of a meal, served with a nice glass of passito white or Recioto di Soave.
Its paste is straw-white in color, mottled due to the development of mold with very pronounced green and blue veins. Its rind is rough and pink. The flavor is spicy, savory, with an elegant sweet accent given by the aging in white wine.
