This Aromatic aged in walnut leaves by Corrado Benedetti has as its base a Cimbro and is a genuine and healthy cheese, very fragrant and particularly aromatic.
After an aging period of over 90 days, the wheels of Cimbro are preserved for two months wrapped in sprigs of rosemary and sage, from which they slowly absorb the intense aroma.
The origins of Cimbro date back to around the year 1300, and it owes its name to the people of the Cimbri, who at that time had found their home in Lessinia. Mostly shepherds and farmers, woodcutters, and simple sheep breeders: among the meadows and rocks of the mountain range, they found their promised land. With them, the production of this cheese began, which has remained in the Veronese tradition.
Ingredients: Cow's milk, salt, rennet, selected lactic ferments. Non-edible rind. Aged in sage and rosemary.

The Cimbro aged with sage and rosemary (in half form of about 1kg) is ideal for typical cheese boards to be paired with mustard or acacia honey.
It pairs well with a structured white wine that is slightly soft or a structured red wine from dried grapes such as a Ripasso.
This is a particularly flavorful cow's milk cheese with a nice floral component and a particularly compact texture.
Over time, the pronounced aromas of the herbs with which it has been preserved reach, in the heart of the Cimbro, a perfect balance and spread pleasantly on the palate.
