The Redivino is undoubtedly one of the flagship cheeses of Corrado Benedetti. Full-bodied and soft, with an intense flavor and enveloping aroma: this quality cheese has a lot to offer, but its main peculiarity is undoubtedly the refinement in Amarone della Valpolicella DOCG.

During the harvest period, the cheese wheels are immersed in the must of Corvina, Rondinella, and Molinara grapes, from which Amarone is produced, and then left to rest for a period that varies depending on the weight. Once removed from the vats, they are dried and set for long aging from six to eight months. The refinement of the grapes of this precious wine enhances the cheese by softening its flavor and accentuating its body.

Ingredients: cow's milk, rennet, salt, lactic ferments. Aged in "Amarone della Valpolicella DOCG" wine.
