Redivino cheese aged in Amarone della Valpolicella DOCG 300g

The Redivino is undoubtedly one of Corrado Benedetti's flagship cheeses. Full-bodied and creamy, with an intense flavor and enveloping aroma: this quality cheese has much to offer, but its main characteristic is undoubtedly the aging in Amarone della Valpolicella DOCG.

During the harvest season, the cheese wheels are immersed in the must of Corvina, Rondinella, and Molinara grapes, from which Amarone is made, and then are left to rest for a variable period depending on their weight. Once removed from the vats, they are dried and sent for aging for six to eight months. The aging of the grapes from this fine wine enhances the cheese by softening its flavor and accentuating its body.

The Redivino cheese aged in Amarone della Valpolicella DOCG (which we present on this page in a 300g portion) is very suitable to be tasted on its own at the end of a meal accompanied, of course, by a great Amarone DOCG. Alternatively, a Valpolicella DOC can also go well.

It pairs very well with chestnut honeys and dandelion honeys, with dessert wines and recioti from red grapes.
