For its production, Piedmontese milk and flowers of Cynara Cardunculus, a wild thistle that grows wild throughout the Mediterranean basin are used.
The long aging, over 12 months, has allowed the product to be lactose-free, even obtaining Halal certification, essential for the Muslim world and for exporting to Arab and Asian markets. It is characterized by delicate and never intrusive aromas with a grainy texture of excellent consistency. It releases fresh and floral aromas, reminding the taste of milk and cream, ending with an herbal note that leaves sensations of freshness and excellent pleasantness.

It’s also excellent on cured meat or to be enjoyed on its own with a Cremonese mustard.
It pairs wonderfully with a good sparkling wine, a full-bodied red, and craft red or dark beers.
Is it Kinara or Gran Kinara? The current Kinara is the old Gran Kinara; it has just been renamed by the producer because it was considered too similar to another famous cheese.
