The province of Enna is the source of this sheep cheese, enriched in the paste with whole pepper, then aged and refined in the caves of the Treviso company.
After a minimum aging of 4 months in the cave, the process continues inside tanks containing the pomace of the precious Nero d’Avola wine, renowned and recognized as the guardian of Sicily and its flavors.
The Pecorino al pepe Ubriaco di Nero d'Avola from La Casearia Carpenedo (which we present here in a 330g portion) is a symphony of aromas that invades the olfactory senses: berries, spices, and balsamic notes. The intense aroma of sheep's milk is balanced with the hints of wine and the spiciness of the peppercorns. It has a taste with notes of berry, cherry, plum, and presents spicy and balsamic notes. All of this is in harmony with the flavors of the pastures. A great meditation cheese to pair with great aged red wines.
Cylindrical cheese made from sheep's milk, featuring a ruby-colored rind. The paste is pale white and dotted with whole peppercorns and infiltrations of Nero d'Avola wine, making this cheese spectacular when cut. It is a semi-hard cheese with a slight creaminess and an elastic note.
