The Flavors of Sicily


The Sicilian cheese used is unique in its kind: made from raw cow's milk, aged for at least 6 months, in a classic parallelepiped shape, with a straw-yellow rind due to the action of the passito, almost golden. The sweet residue of the passito in the rind pervades the sense of smell stimulated by the complex array of fragrant and bold aromas. The aroma takes on delicately honeyed characteristics in the paste.
