The Caciobirraio from La Casearia Carpenedo is the meeting of the fantastic world of cheeses by Antonio Carpenedo and the beer from the best master brewers of Belluno. The beer from the Dolomites thus enters the large volume of ingredients that Antonio uses to create his wonderful aged cheeses.
The Caciobirraio is a refined cow's milk cheese, indeed, in beer. The beer comes from the Belluno area and the cheese, aged for at least a month, is produced with local milk: a combination of quality and goodness. Small, cylindrical in shape.
The delicate and non-invasive maturation in beer gives a pleasant malt aroma perfectly balanced with the notes of fresh milk.

The Caciobirraio from La Casearia Carpenedo is fresh and dry and is perfect for being consumed with your fingers. Sweet and delicate taste. The malt gives a velvety sweetness in harmony with the flavor of fresh milk. It melts in your mouth. Excellent for aperitifs accompanied by blonde lager beer. Delicate and persistent aftertaste.
The edible rind is malt-colored, slightly irregular, and characterized by slight reliefs from the mold. The paste is milk white. Soft, elastic cheese that is pleasant to the touch.
