The cheese Toma Blu matured with aromatic herbs from La Casearia Carpenedo is one of the most exciting pasteurized milk cheeses. If not the most exciting! It is a delicate blue cheese matured in oak barrels, an incredible example of how tradition and progress coexist in the philosophy of Antonio Carpenedo, a pioneer, researcher, and true archaeologist of ancient flavors to pass down and integrate into his cheeses.

This blue cheese matured with aromatic herbs is a watershed between the obvious, the customary, and the already-seen, offering an experience from which one cannot return. Made with pasteurized cow's milk and aged for a minimum of 3 months, it surprises you with its buttery texture and easily deformable paste, slightly elastic and soft. The sensory experience of Toma Blu is a journey through mountain pastures.

Cylindrical in shape, characterized by a color of fermented herbs, which is not uniform. The paste is yellow, streaked with a light blue veining of green and pink. The aromatic herbs leave a pleasant balsamic sensation that blends with the elegant scent of penicillium and buttery notes.
