Antonio Carpenedo wanted to dedicate this cheese to that world of the past that fades like in an old photograph, but it is right to keep the memory alive because it is part of the culture of Italy as a whole.
Antonio Carpenedo's Ubriaco method is undoubtedly a way to preserve traditions, paying homage to dairy traditions with wine, often sipped between one card game and another.
The cheese Briscola is nothing but a toma made from pasteurized cow's milk soaked in fruity red Cabernet wine. Subsequently, the cheese is aged for a minimum of 4 months.
The cheese Briscola by La Casearia Carpenedo (which we present to you here in half form) has a semi-hard texture that tends to crumble, making it excellent to be served on a beautiful cheese board. Very flavorful, the Briscola cheese is true, sincere, and for this reason, it is perfect to be enjoyed in company with a glass of structured red wine, perhaps during a game of briscola.
The wine-colored rind covered with the grape pomace used for the aging process is striking. The wine notes stand out immediately, accentuated by the presence of the pomace. In perfect balance with the spicy elements, which surprise with a hint of pepper. Fruity aromas emerge, with a hint of cherry. The Briscola is flavorful, slightly spicy, with notes of buttermilk and forage. We find the delicacy of the fruity and spicy wine notes.
