The Briscola cheese is nothing but a toma of pasteurized cow's milk soaked in fruity Cabernet red wine.
Subsequently, the cheese is placed to age for a minimum of 4 months.

The wine-colored rind covered with the pomace used for soaking is striking. The wine notes stand out immediately, accentuated by the presence of the pomace. In perfect balance with the spicy notes, which surprise with a hint of pepper. Fruity notes emerge, highlighting the cherry. Briscola is flavorful, slightly spicy, with hints of buttermilk and forage. We find the delicacy of fruity and spicy wine notes.
