The cheese Conciato al Pepe Vaccino from La Casearia Carpenedo is very special and perfectly describes the passion that Antonio Carpenedo has for spices and their aromas.
In particular, the pepper: this small seed contained in a red berry, originating from southern India and cultivated in tropical areas.
The Conciato al Pepe is a cheese made from pasteurized cow's milk aged for a minimum of five months and, at the right time, it is sealed inside oak barrels with a mix of pepper that is carefully guarded.
The barrels thus filled follow a precise rotation program to allow for a perfect transformation and transfer of flavors.
The cheese Conciato al Pepe Vaccino from La Casearia Carpenedo (which we present on this page in half form of about 1.15kg) has a great predisposition to flaking, given its semi-hard paste and compact consistency. In the mouth, the pepper "explodes" gently: piperine, the substance that gives the spicy flavor to pepper, is pleasantly balanced by the cheese's properties with notes of milk and butter. A splendid element for a refined cuisine and enjoyed pure with a barrel-aged red wine, well-structured or young with a decisive character.
The Conciato al Pepe Vaccino cheese is presented in a cylindrical, slightly irregular shape. The rind is dark in color and has a rough appearance due to the massive presence of crushed pepper. The paste is straw yellow and slightly spotted. Very particular to the touch on the rind due to the presence of crushed pepper. The unmistakable aroma of pepper evokes the distant bazaars of India with a mix of wood, flower, and a slight hint of lemon. In the paste, everything is enveloped by the intense aroma of warm milk and butter.
