The cheese Conciato al Pepe Vaccino from La Casearia Carpenedo is very special and perfectly describes the passion that Antonio Carpenedo has for spices and their aromas.
Specifically, pepper: this small seed found in a red berry, native to southern India and grown in tropical regions.
Conciato al Pepe is a cheese made with pasteurized cow's milk aged for at least five months, and at the right moment, it is sealed inside oak barrels with a mix of pepper that is carefully preserved.
The barrels filled in this way follow a precise rotation program to allow for a perfect transformation and transfer of flavors.
The cheese Conciato al Pepe Vaccino from La Casearia Carpenedo (which we present here in an eighth of a wheel weighing about 300 grams) has an excellent disposition for grating, given its semi-hard paste and compact consistency. In the mouth, the pepper "explodes" gently: piperine, the substance that gives the spicy flavor to the pepper, is pleasantly balanced by the properties of the cheese with notes of milk and butter. A splendid element for refined cuisine and paired with a barrel-aged red wine, of good structure or young with a decisive character.
The cheese Conciato al Pepe Vaccino appears in a cylindrical, slightly irregular shape. The rind is dark in color and has a rough appearance due to the massive presence of crushed pepper. The paste is a straw yellow color and slightly open-textured. Very peculiar to the touch on the rind due to the presence of crushed pepper. The unmistakable aroma of pepper evokes the distant bazaars of India with a mix of scents of wood, flowers, and a faint hint of lemon. In the paste, everything is enveloped by the intense fragrance of warm milk and butter.
