The cheese Gionè from La Casearia Carpenedo was born from an idea of Antonio Carpenedo to commemorate the figure of Giorgio Onesti, a person who dedicated his life to the research and selection of gastronomic delicacies. In the 1970s, he collaborated with Antonio as a representative; it was thanks to him that the first rounds of Carpenedo cheeses knocked on the doors of specialty food stores throughout Italy, particularly in the market of Rome. Giorgio, during one of the long conversations with Antonio, which usually lasted until late at night after dinner, suggested he register the famous brand Ubriaco.
To create the Gionè, Antonio decided to start with a base of raw cow's milk cheese aged for at least 5 months produced in the Venetian mountains. He decided to mature it in his cellars with a top-secret treatment he created himself that coats the cheese's crust. During the aging period, each wheel takes its shape and is enriched with particular aromas that take us on a journey through wild herbs, flowers, ripe fruit, spices, and underbrush.
The cheese Gionè from La Casearia Carpenedo (which we present to you on this page in a quarter form of approximately 2kg) is a cheese that tastes of pasture, of mountain pastures and carries with it the charm of distant spices. The alcoholic notes enhance the pride and elegance of this cheese, reminding us why Gionè exists. Perfect with a peaty Whisky or chestnut distillate.
To the eye: velvety appearance, the brown of the special seasoning envelops the irregularities of this unique cheese. Its curves resemble sweet hills just sown. In hand: extraordinary contrast; the dry and delicate crust contrasts with the softness of the paste. To the nose: in the Gionè paste, you can sense pastures, and in the crust, Antonio Carpenedo takes us on a fascinating and mysterious journey. A sensory play, because the ingredients remain a secret of Antonio.
