The cheese Fragolone from La Casearia Carpenedo is a truly unique cheese: a provolone mandarino aged and then immersed in pomace and must with fruity notes reminiscent of strawberry. This process is part of the Ubriaco method by Antonio Carpenedo and imparts unique aromas and flavors to this spun pasta cheese of ancient origins.
The special processing leaves residues of pomace on the rind and gives the rind a garnet hue. The paste is light yellow with uneven holes. It is a spun pasta cheese made from raw cow's milk, with a semi-hard consistency. The aging of at least 4 months enhances the spicy part, well balanced by the buttery and fruity notes of the grape and must. The notes of strawberry and honey stand out.
