The cheese Cacioradicchio from La Casearia Carpenedo is a tribute by Antonio Carpenedo to the farming tradition of Treviso, combining cheesemaking art and a flower from the Treviso gardens famous all over the world. Caciotta and trevigiano radicchio: a perfect match that creates in this product a connection of flavors that speak of genuineness.

Cacio like caciotta: the base of this wonderful aged cheese is made of pasteurized cow's milk and aged for a minimum of one month. Soft, sweet, and excellent for melting.

The Cacioradicchio cheese from La Casearia Carpenedo is a cheese with a soft, elastic texture. It is excellent for appetizers or to start a vertical tasting of cheeses. The melting point is good, making it perfect for delightful creations, pairing well with fresh or lightly grilled radicchio.


TASTING


The whiteness of the paste is dotted with radicchio colored spots, attesting to its presence. The paste shows slight cracks when cut, is dry and pleasant to the touch. The aroma of fresh milk typical of Veneto caciotta prevails, with a slight bitter note, characteristic of radicchio. On the palate, it releases fresh flavors, primarily from the milk, with its sweetness in harmony with the slightly bitter notes typical of radicchio. 

Tasting notes

Il candore della pasta è punteggiato di macchie color radicchio a testimonianza della sua presenza. La pasta presenta leggere fessurazioni al taglio, è asciutta e piacevole al tatto. Prevale l’aroma del latte fresco tipico della caciotta veneta con una leggera nota amara, tipica del radicchio. In bocca sprigiona sapori freschi, su tutti quelli del latte, con la sua dolcezza, in armonia con le note tipiche del radicchio, leggermente amare.
