The cheese Cuor di Noce vaccino from La Casearia Carpenedo is very special and perfectly describes the passion that Antonio Carpenedo has for dried fruit, specifically nuts

To create this specialty, Antonio started from a wheel of cow's milk cheese made with pasteurized milk and aged for 6 months. Then the wheel is aged for a variable time inside barriques with walnut leaves.
