Gibe is the diminutive of Gibellini. To tell the truth, one of the brothers was Mauro Gibellini, who in the seventies and eighties was called GiboGoal! Gibe is a 100% Lambrusco Grasparossa. A rarity considering that it is usually found in blends with other wines of the denomination. It is a Lambrusco that we could define as "young" since it stays on the skins for only 3 days. A subsequent fermentation in stainless steel and then a sparkling process for 30 days.

Tenuta Pederzana, Emilia Romagna

Everything began in Solignano Vecchio, in the municipality of Castelvetro in Modena, in the immediate post-war period. Franco Simonini, a great winemaker from Castelvetro, acquired a new estate where he decided, with his wife Margherita, to isolate the best strains of Lambrusco in collaboration with the University of Bologna. In particular, he focused on the autochthonous variety par excellence: Grasparossa. He managed to isolate a unique clone in the panorama of clones of the denomination and years later, his grandson Francesco Gibellini, along with Uncle Massimo, used it as the only clone for his great expressions of Lambrusco. This year, Lambrusco from Pederzana was recognized by the prestigious Guida ai Vini d'Italia dell'Espresso as the best Lambrusco overall and received the Oscar of excellence.

Lambrusco Grasparossa di Castelvetro DOC Gibe Dei Giovani: use in the kitchen

Gibe has notes of small red forest fruits, raspberries, currants, and sour cherries. The spice is peppery and delicate. The hints of aromatic herbs are gentle and refresh the aromas. On the palate, it is dense and creamy with a beautiful elegant bubble. Fresh, savory, and definitely fruity. Smooth on the palate with a gentle and well-balanced tannin. Very elegant and sinuous.

Food pairings: excellent to accompany traditional Modenese cured meats, especially if well-spiced and fatty. Great with cotechino and zampone. Works well with boiled beef. Excellent for first courses of Emilia cuisine such as tortellini, lasagna, the legendary tigelle, and gnocco fritto.
