Cantolibero means an exciting Lambrusco free from added sulfites. It is obtained from the ancient clone selected by Simonini of 100% Grasparossa. Grasparossa is the name given to the Lambrusco grape cluster from Castelvetro, as when it reaches maturity, the stem takes on that particular intense coloration.
Cantolibero is a wine that undergoes the classic fermentation typical of Lambruscos with prolonged maceration at controlled temperature.
All enological activities are carried out in complete absence of oxygen to avoid any addition of sulfites in the transformation process from must to wine.
Everything begins in Solignano Vecchio, in the municipality of Castelvetro in Modena, in the immediate post-war period. Franco Simonini, a great winemaker from Castelvetro, acquires a new estate where he decides, along with his wife Margherita, to isolate the best vines of Lambrusco in collaboration with the University of Bologna. In particular, he focuses on the indigenous variety par excellence: the Grasparossa. He manages to isolate a unique clone in the landscape of clones of the denomination, and years later his nephew Francesco Gibellini, along with Uncle Massimo, used it as the only clone for his great expressions of Lambrusco. This year, the Lambrusco from Pederzana has been recognized by the prestigious Guida ai Vini d'Italia dell'Espresso as the best Lambrusco overall and has received the Oscar of excellence.
Cantolibero is a wine endowed with a very extensive aromatic profile that reveals scents of red fruits like sour cherry, blackberry, and raspberry. Moreover, it is delicately spiced not only with pepper but also with ginger, as well as sweet and spicy spices.
Pleasant on the palate, dense, full, creamy, and decidedly intriguing with its spicy component. Excellent fresh and almondy finish with sour cherry and aromatic herbs, thyme, and rosemary.
Pairings. It is an excellent companion for appetizers and savory starters. Enjoyable with traditional Modenese cold cuts, with zampone (stuffed pig's trotter) and soups based on legumes. Perfect with beef tartare from Limousine cattle.
Serving temperature. When consumed as an aperitif with appetizers, it is preferable, being a semi-dry wine, to serve it at a cool temperature of about 10 - 12°C. For soups and warm dishes, do not bring it to too high temperatures, although at least 14°C is recommended.
