The Sbrisolona is a typical sweet from the Mantuan tradition whose recipe dates back several centuries ago.
This cake is produced by the bakery Dolci Sereni in Mantova, where tradition is a true company philosophy.
Besides the typical Sbrisolona with almonds, this delicious chocolate variant is also very popular, which we present right here in the palm oil free and lactose free version.
This sweet owes its name to its crumbly texture, and to the large and small crumbs that are formed when it is broken to be consumed, as Sbrisolona should not be cut, but broken by hand.
The Sbrisolona seems to have originated before the 1600s as a poor sweet of peasant origins that was prepared on special occasions such as the birth of a child or a marriage proposal, then kept for a long time. The Sbrisolona became more refined with the arrival at the court of the Gonzaga, who enriched it by introducing more noble ingredients.
The Chocolate Sbrisolona Lactose-Free from the Dolci Sereni bakery is excellent to taste accompanied by a sweet and liquorous wine such as Malvasia, Passito di Pantelleria, or Vin Santo.
An essential pairing is with grappa, with which the cake is often soaked.
