The Sbrisolona is a typical dessert from the Mantuan tradition, with a recipe dating back several centuries. This cake is produced by the Dolci Sereni bakery in Mantua, where tradition is a true company philosophy. Here we present the typical Sbrisolona with almonds but in the version without palm oil and lactose-free.
This dessert owes its name to its crumbly texture, due to the large and small crumbs that form when it is broken to be consumed, as Sbrisolona should not be cut, but broken by hand.
This is a completely unique format as the cake is presented not whole, but in a tray containing 10 single portions.
The Sbrisolona seems to have originated before the 17th century as a poor dessert of peasant origins, prepared on special occasions such as the birth of a child or the promise of a wedding, and then stored for a long time. The Sbrisolona became more noble with the arrival at the court of the Gonzagas, who enriched it by introducing more noble ingredients.
Ingredients: Type “00” soft wheat flour, Sugar, Vegetable fats and oils (coconut and sunflower oil), Water, Potato starch, Pasteurized egg yolk and white, Almonds (1.5%), Leavening agents (sodium acid pyrophosphate, sodium bicarbonate, potato starch), Salt, Flavors.
