Antonio Carpenedo has managed to refine and lovingly transform Sicilian cheese and Zibibbo into a unique product, which completely changes to gift us in one bite the magic of a land washed by the sea that gives unique savor to the milk, wonderfully balanced by the sweetness of the passito wine.


The Flavors of Sicily


The Sicilian cheese used is one of a kind: made with raw cow's milk, aged for at least 6 months, in a classic rectangular shape, with a pale yellow rind due to the effect of the passito, almost golden. The sweet residue of the passito in the rind pervades the sense of smell stimulated by the complex ensemble of pure and bold scents. The aroma takes on delicately honeyed characteristics in the paste.

Characteristics


Its texture is a deep yellow, compact and with possible fissures. To the touch, the firmness of this semi-hard cheese is surprising, a result of the organoleptic transformation due to the refermentation in the passito wine. Soft to the pressure of the fingers, pleasant to taste with the fingertips.
