The Summer Wind has a name that is all a program... in fact, it is a cheese that speaks of the sun and the wind but also of the freshness of blooming meadows in the Dolomites and of the hands of farmers who cut the stubble by hand to produce fragrant hay.
This cheese is produced only in the summer months in the Dolomitic pastures and is then aged in fragrant and blooming spring hay.
During this time, the cheese acquires softness but especially very intriguing hints of hay.

The Summer Wind is a cheese with a beautiful texture and compactness but also a certain softness due to the aging in fresh spring hay rich in flowers and aromatic herbs from the alpine meadows.
The scent of hay can indeed be perceived very distinctly and enhances the pleasantness of the dairy and buttery notes of the cheese.
Excellent for a quality cheese board, to be paired with noble Italian cold cuts and pear jams or delicate apple-based mustards.
Moreover, it pairs very well with acacia or chestnut honey and full-bodied white wines with good aromaticity such as Muller Thurgau and Gewurztraminer.
